Gooseberry-Almonds Surprise Cake

Yay! Two people working at the kitchen early in the morning while sipping a cup of coffee.  Doing the measuring, and preparing ingredients for the Baked and Yard sale at Christ Community Church.

Finally, after a 2-hours and a half of preparing and baking, Joshua and I finally got the result of our first baking experience as a team.  Our finished baked product is called Gooseberry-Almonds Surprise Cake as named by Joshua a man behind Herblend Teas.

Amla Gooseberry is very highly concentrated in vitamin C. It enhances food absorption, balances stomach acid, fortifies the liver, nourishes the brain and mental functioning, supports the heart, strengthens the lungs, regulates elimination, enhance fertility, helps the urinary system, is good for the skin, promotes healthier hair from roots to tip and also the color. Acts as a body colagen, flushes out toxins, increases vitality, strengthens the eyes, improves muscle tone, and it acts as an antioxidant. It can improve eyesight. This berry may slow the aging process.  



For those who love to try this at home, here are the ingredients and how to do it:

3/4 cup of butter,softened
1 cup sugar, sieved
3 large, fresh eggs, beaten
3/4 cup self-rising flour, sifted (Ginger Evans)
3/4 tsp baking powder
2 cups raw natural almonds, crushed
1/2 cup dried amla gooseberry, boiled and made into tea
1 cup water
3 tsp sugar
2 cups raw whole almonds 

Method:

1. Preheat the oven to 350 degrees F. Beat the butter and 1 cup sugar until pale and fluffy. (Better to beat the butter separately before adding the sugar). Add the eggs a little at a time, beating well after each addition. If the mixture starts to curdle, add a tablespoon of flour. Fold in the rest of the flour, the 2 cups of crushed raw almonds, and the baking powder using a wooden spoon. Gradually add the 1/8 cup extracted amla gooseberry tea. Grease the eco-foil aluminum cake (12 1/4 in. x 8 1/4 in. x 1 3/32 in.) pan with olive oil or  butter.

2. Bake for 25 minutes then remove from the oven and sprinkle the 2 cups raw whole almonds and return to the oven for another 10 minutes. The cake is ready when a fork inserted to its center comes out clean. Leave it to cool in the pan then carefully remove it out from it and turn it over in a separate pan. 

You can actually eat it with a cup of mind-brew coffee.
